Feta Fried Eggs

Once you try these 5-minute feta fried eggs, you’ll understand why this recipe is going viral on social media. This genius dish is heavily inspired by @graceelkus on Instagram, and it will be your new favorite five-minute breakfast or snack.

What stands out

This recipe is remarkably adaptable, allowing you to personalize it as much as you’d like. You can experiment with a number of crumbly, salty cheeses, going beyond traditional feta. When it comes to the vehicle for this cheesy dish, both corn and flour tortillas are excellent options.

Char them directly over a gas flame for a smoky flavor or use a hot, dry skillet for that satisfying crispy edge. While avocado adds a creamy dimension to your dish, it’s not mandatory. Feel free to explore other options such as a dollop of hummus or a serving of refried beans.

Kitchen tip

This recipe offers plenty of room for creativity. Feel free to swap the feta for other crumbly, salty cheeses like mozzarella or cheddar.

How To Prepare Feta Fried Eggs

  1. We start by warming some crumbled feta (always use feta in brine, never pre-crumbled) in a pan, and frying an egg directly on top to create a lacy, crispy, cheesy crust. Meanwhile, we char a tortilla, smash on some avocado and seasoning, and add the cheesy egg right on top. Perfection!
  2. We like our egg yolk runny, so we gently crack an egg into the center of the pan, then cover it with a lid to help it cook evenly. Two to three minutes is the sweet spot for a sunny-side-up egg; no flipping is required. Check out our tutorial for cooking on stainless steel pans How To Make Stainless Steel Non Stick or make the egg in a nonstick pan.
  3. And for the grand finale, garnish with your favorite fresh herbs (we used chives), some hot sauce, if you like, and let the runny egg yolk cover the tortilla like a sauce.

Substitutions and Variations

This dish is all about making it your own and enjoying a meal tailored to your taste.

  1. Put your egg on top of toast, rice, or hashbrowns instead of a tortilla.
  2. Use a dairy-free cheese if needed.
  3. Swap feta for mozzarella, cheddar, parmesan, or any crumbly, salty cheese of your choice.
  4. Enhance your meal with toppings like diced tomatoes, red onion, or a sprinkle of fresh herbs for a burst of freshness.

Questions

Can we use a different cheese instead of feta?

Yes, you can substitute feta with other crumbly, salty cheeses like mozzarella, cheddar, or parmesan to suit your taste.

Is there a preference between corn and flour tortillas?

It’s entirely up to your preference. Corn tortillas have a distinct flavor and slightly chewy texture, while flour tortillas are softer and have a milder taste. Choose the one you prefer or have on hand.

Can we use pre-shredded cheese instead of crumbled feta?

It’s best to use feta in brine or crumble it yourself for the optimal texture and flavor. Pre-shredded or crumbled cheese may not melt and crisp up the same way.

What are some other topping options besides avocado?

Try guacamole, salsa, a sunny-side-up egg, hummus, sour cream, or warm refried beans as alternatives to avocado.

Any suggestions for adding extra flavor to the dish?

Experiment with various herbs, spices, or hot sauces to season the eggs and enhance the dish’s taste to your liking.

Ingredients

Makes 1 servings

  • ⅓ cup feta
  • 1 egg, large
  • ½ avocado
  • salt, to taste
  • 1 teaspoon lemon juice
  • 1 6-inch tortilla, (any variety: corn, flour, nut-based)
  • 1 teaspoon chives, chopped

Equipment

  • Ceramic Pans

Method

  1. Heat a small nonstick skillet over medium-high heat. Crumble in the feta and immediately crack an egg into the center.
  2. The feta is salty so we don't season the egg but you can if you wish. Cover the pan with a lid and reduce the heat to medium-low.
  3. Cook for a few minutes until the egg white is set, the yolk is still runny, and the feta is crispy and golden on the bottom.
  4. In a bowl, mash the avocado with a pinch of salt and a touch of lemon juice.
  5. We charred the tortilla in a pan on the stove and added the mashed avocado on top.
  6. Slide the fried feta egg on top of the tortilla, garnish with chives (if desired), and enjoy!
