  • 2 pounds ground beef
  • 1 pound ground pork
  • 4 cloves garlic minced
  • 1 egg
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon dried oregano
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 1/2 teaspoon red pepper flakes optional

Instructions

  • Preheat oven to 400°F (200°C).  Line two baking sheets with foil for easy cleanup, then set aside.
  • In a large bowl, combine all ingredients until just mixed. Be careful not to overmix, as this can lead to tough meatballs. Shape the mixture into equal sized balls, about 2 tablespoons each. An ice cream scoop works wonderfully for consistent portioning. When shaping, avoid packing them too tightly to ensure a tender texture.
  • Arrange the formed meatballs on the lined baking sheets, leaving a little space between each one (approximately 12 meatballs per sheet). Bake in the preheated oven for about 20 minutes, or until they are cooked through and have a slight golden crust.
