Green Goddess Chicken Salad

Chicken salad has a texture problem, and we're here to fix it. No stringy shreds, no dry chunks, and definitely no swimming in a sea of mayo. So after a lot of testing (and a lot of chicken salad for lunch, no complaints), we've finally perfected this Green Goddess Chicken Salad. It’s impossibly creamy chicken blended with a herby green goddess dressing that happens to be made with cottage cheese instead of mayo. Don’t worry, you’d never guess it’s in there if we didn’t tell you. Then it gets loaded with crunchy celery, green onion, and pickles that keep every single bite interesting.

Ingredients

Makes 4 servings

  • 2 small chicken breasts, 6 ounces cooked (or rotisserie chicken)
  • 1 handful fresh dill
  • 1 handful fresh parsley
  • ¾ cup cottage cheese, 4%
  • 2 tablespoons honey Dijon mustard, to taste
  • 1 tablespoon white balsamic vinegar
  • 2 tablespoons ranch dressing, any of choice
  • salt, to taste
  • 1 celery rib, finely diced
  • 2 green onions, finely diced
  • 6 small pickles, finely diced

Optional Crunch

  • jalapeño, diced
  • green apple, diced

Equipment

  • Large Food Processor
  • Cutting Board
  • Nakiri Knife
  • Mixing Bowls
  • Measuring Cups + Spoons

Method

  1. Add the cooked, skinless chicken breast to a food processor and process until finely shredded. Transfer to a large mixing bowl.
  2. Add the dill, parsley, cottage cheese, honey Dijon mustard, ranch dressing, white balsamic vinegar, and salt to the food processor. Process until smooth and creamy.
  3. Pour the dressing over the shredded chicken and stir to combine.
  4. Fold in the diced celery, green onion, and pickles, along with any optional crunch add-ins like jalapeño or green apple.
  5. Taste and adjust salt as needed, then chill until ready to serve.

Kitchen notes

  • Storage: Keeps in an airtight container in the fridge for up to 4 days.
  • Substitutions: Rotisserie chicken works in place of cooked chicken breasts; Greek yogurt can sub for ranch.
  • Serving size: Easily doubled for meal prep.

What stands out

Impossibly creamy chicken: Processing the chicken breaks it down into a fine, almost whipped texture. No stringy or dry bites in this chicken salad.Herby, tangy, green goddess flavor: The dill and parsley bring a fresh, herbaceous punch that regular chicken salad just doesn’t have.Sneaky protein boost: Cottage cheese swaps in for mayo, keeping things creamy while adding extra protein you won’t even taste.Crunch in every bite: Celery, green onion, and pickles keep the texture interesting.

Hand holding herb cheese scoop on fresh apple slice

Chicken breast: Use homemade cooked chicken breast or grab a store-bought rotisserie chicken to save time.Dill & parsley: Fresh is non-negotiable for this one. Dried herbs won’t give you the same bright, green goddess flavor.Cottage cheese: Blends completely smooth in the processor, so don’t worry about any curds showing up in the final salad.Honey Dijon mustard: Adds a little sweetness and tang that balances out the herbs.White balsamic vinegar: Brightens the whole dressing without darkening the color like regular balsamic would.Ranch dressing: Use your favorite store-bought or our homemade ranch. It adds extra creaminess and deliciousness.Celery, green onion & pickles: Finely dice all three so you get crunch and flavor in every single bite, not just every third one.Optional crunch: Jalapeño for heat, green apple for a sweet-tart bite, or both! We vote both!

Kitchen tip

Process the chicken in batches if your food processor is on the smaller side. Overloading it leads to uneven shredding, with some pieces turning to paste while others stay chunky.

Swaps

  1. For a lighter swap, use Greek yogurt or skyr in place of the cottage cheese. It’ll be slightly tangier but just as creamy.
  2. To make it dairy-free swap the cottage cheese and ranch for dairy-free yogurt and a dairy-free ranch alternative. The flavor will change, but the texture will be similar.
  3. Add more fresh herbs alongside the dill and parsley, such as chives, tarragon, or basil.
  4. Swap in diced green apple for the pickles if you want something sweeter and crisper instead of briny.
  5. Spice it up with diced jalapeño, a pinch of chili flakes, or a dash of hot sauce.

Serve it with

  • Scoop it onto butter lettuce cups or fresh cucumber rounds for a low-carb lunch.
  • Pile it onto No Knead Bread for the ultimate chicken salad sandwich or Homemade Pita.

Questions

Can we use rotisserie chicken?

Yes, rotisserie chicken works great and saves you a step. Just remove the skin before processing.

Will we be able to taste the cottage cheese?

No, it blends completely smooth into the dressing and just adds creaminess, not flavor.

Can we make this ahead of time?

Yes, it keeps well in the fridge for a few days and the flavor actually improves after sitting overnight.

Can we make this dairy-free?

Swap the cottage cheese for a dairy-free yogurt and ranch for dairy-free alternative. The texture will be different but still creamy.

How finely should we process the chicken?

Fine enough that there are no large chunks left, but stop before it turns into a paste.

Can we freeze this?

Not recommended. The texture of the cottage cheese and fresh veggies won’t hold up well after thawing.
