Baked Cauliflower Dish

This Cheesy Baked Cauliflower Dish will be your new favourite side. We were having one of those late-night, genius-strike moments. You know, the kind where you think you’ve cracked the code to world peace or, in this case, the ultimate low-carb side dish. At first, we were thinking mashed cauliflower, but then, like a bolt of inspiration, we realized: roasting it in creamy Boursin cheese is the way to go. Think of Cauliflower Gratin, but better!

Next, add the cauliflower to a baking dish and place about 1/2 the block of herb Boursin cheese in the middle.

Now, add in a pinch of salt and pepper. Drizzle over a tiny amount of olive oil and pour in the broth (or water) through the side.

A golden liquid is being poured over the top. The background is blurred with circular lights.
A hand holds a spoon, scooping creamy cheese sauce over roasted cauliflower florets in a white baking dish. The cauliflower is lightly browned and seasoned with herbs, creating a savory dish.
A close-up of the finished recipe sprinkled with grated cheese. The cauliflower is lightly browned and seasoned with herbs, visible in the creamy coating. The cheese is falling onto the vegetables, adding texture and flavor.

Bake uncovered for 35 to 40 minutes. Now, take it out of the oven, mix it all together, and enjoy.

Kitchen tip

Raw cauliflower works better than frozen cauliflower in this recipe, since the frozen variety holds a lot of water resulting in a less creamy, more watery finished dish.

A fork is holding a piece of cauliflower, displaying a golden-brown edge, with sauce and herbs visible. The dish is set on a light-colored surface.

Swaps

  1. This recipe will work just as well with broccoli.
  2. If you don’t have Boursin, mix some cream cheese with your favorite chopped herbs and then add that to the center of the baking dish.
  3. Feel free to add garlic powder, onion powder, or paprika to this Baked Cauliflower Dish for additional flavor.
  4. Use whatever broth you love in this dish: vegetable, chicken, beef, or bone broth will work. If you don’t have, use more water instead.
  5. You can also add additional veggies to this mix. Thinly sliced carrots, onions, or bell peppers would be and add nice color as well.
  6. If you like, add some heat to this Baked Cauliflower Dish. You can drizzle with a chili oil, or add some chili flakes to the dish before baking.

All About Cauliflower

We love cooking with cauliflower. It is so versatile, and a dream if you’re living a low-carb lifestyle. It’s from the same family as broccoli (obvs!), kale, and cabbage, so you know it’s nutritious and works with a variety of cooking methods (think grilled, steamed, roasted or raw).

We love using cauliflower in this au gratin style because it holds up just as potatoes would, but it’s loaded with fiber and vitamins and won’t hit you with a carb overload. The cauliflower comes out so tender when baked this way, but it still holds up to the creamy sauce.

Questions

CAn we use broccoli instead of cauliflower?

Yes, you certainly can. Broccoli will work just as well!

What cheese can we use instead of boursin?

If you don’t have herbed Boursin, mix together cream cheese with your favorite herbs (oregano, dill, basil, parsley) and place it in the middle of the baking dish.

can we make this Baked Cauliflower and Cheese dish ahead?

Yes, you certainly can, but it won’t be as creamy as it would be fresh out of the oven. To prep ahead, chop the cauliflower, have everything placed in the baking dish, and then pop it into the oven when you’re ready.

can we make this dairy-free?

Yes, you would certainly be able to use a non-dairy cream cheese instead of Boursin in this Baked Cauliflower Dish.
