For me, it remains one of the finest culinary establishments I’ve ever had the pleasure of visiting.

My Love Affair with Portland and its Unrivaled Food Scene
For those who know me, it’s no secret that Portland holds a special place in my heart – it’s truly my soulmate city. I moved there at 29, met my husband there, and we even tied the knot amidst its unique charm. Over the past four years, we’ve found ourselves drawn back to this incredible city not once, but twice, despite relocating. Most recently, about five months ago, we made the move to the Seattle area. Thankfully, the drive is only a few hours, allowing us frequent pilgrimages to my BFC (Best Friend City, a perfectly platonic love between a girl and her city).

Among the myriad things I adore and deeply miss about Portland is its unparalleled restaurant scene. While Seattle certainly boasts some excellent dining options, Portland’s culinary landscape is simply electric. It’s a city where finding an incredible meal is the norm, not the exception. A few months ago, while making one of our return trips to Portland to finalize our move, we decided it was finally time to experience Ava Gene’s. Our waiter, sensing our culinary curiosity, suggested their kale salad – a dish I’d typically overlook at a restaurant. Yet, this salad… it was utterly magical.

As we savored each bite, we found ourselves playing a guessing game, trying to decipher the secret ingredients that made this salad so extraordinary. When we confessed our curiosity to our waiter, he revealed the shocking truth: it was just five simple components. Kale, fresh lemon juice, rich olive oil, aged cheese, and crispy breadcrumbs. Our jaws nearly dropped. How could something so profoundly delicious be so incredibly straightforward?

Ingredients

1-2 large bunches lacinato kale (about 6 cups chopped) -
4 ounces good quality french bread (about 1/3 baguette) -
3 tablespoons olive oil -
1 lemon (juiced and zested) -
1 ounce freshly grated parmigiano reggiano -
kosher salt -
fresh ground Pepper
Instructions

Break the bread up into chunks and put in a food processor. Pulse until crumbs are coarse.

Toast in a skillet over medium high heat with 2 tablespoons of olive oil, until golden, about 5 minutes. Season with kosher salt.

Drain on a paper towel until ready to use.

Remove the rib of the kale and slice the kale into thin strips.

In a large bowl, add kale, lemon zest, 1 tablespoon of lemon juice and 1 tablespoon olive oil, salt and pepper.

Toss together, and massage the dressing into the kale for 5 minutes.

To serve, spread the kale in a thin layer on a large plate or serving dish. Grate the cheese over the kale in an even layer. Spread the bread crumbs over the cheese and serve.
