And if you love this recipe, try another Only Cans favorite: Butter Chicken Beans.

Before you start

  • This Greek-inspired scoopable salad features finely chopped chickpeas, fresh vegetables, olives, and dill tossed in a creamy blended feta dressing.
  • The “micro-chopped” technique ensures every ingredient is small enough to fit perfectly onto a pita chip for a satisfying bite.
  • It works equally well as a party appetizer, lunch, or afternoon snack.
  • Serve with store-bought or straightforward homemade pita chips (recipe below).

What stands out

Chip-friendly: The finely chopped veggies are straightforward to scoop onto a pita chip, making every bite extra satisfying.

Feta in the dressing: Blending the feta right into the dressing gives you that salty, creamy flavor throughout the dish instead of just a few chunks on top.

Make it yours: Add extra tomatoes, finely chopped romaine, or radishes if you want a little more crunch.

Two ways to serve: Keep things straightforward with store-bought pita chips, or make the optional homemade pita chips from the recipe card below when you want to go the extra mile. (They’re -simple to make and worth it!)

  • ¼ cup olive oil
  • ⅓ cup crumbled feta, 1.75 ounces
  • 2 tablespoons fresh lemon juice

  • 1 teaspoon honey or maple syrup
  • salt and pepper to taste
  • water, as needed (optional)

Homemade Pita Chips

  • Three 8-inch pitas
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • ½ teaspoon sumac (optional)

Equipment

  • Measuring Cups + Spoons
  • Mixing Bowls
  • Chefs Knife
  • Cutting Board
  • Blender
  • Baking Sheet
  • Parchment Paper

Method

Salad

  1. In a large bowl combine the chickpeas, cucumber, onion, tomatoes, bell pepper, olives, pepperoncini (if using), and dill. Mix to combine.

Creamy Feta Dressing

  1. In a blender combine the mustard, olive oil, feta, lemon juice, pepperoncini brine (or additional lemon juice), honey (if using), and season to taste with salt and pepper. Blend until creamy and emulsified. Add about 1 tablespoon water to thin out the dressing, if desired.

Homemade Pita Chips

  1. Preheat the oven to 400F (205C). Line a baking sheet with parchment paper.
  2. Gently separate the pita into two thin rounds. Cut the rounds into chip shapes, such as triangles. Toss on the baking sheet with the olive oil, salt and pepper to taste, and sumac (if using). Bake until crispy and golden, 15 to 20 minutes.

To Serve

  1. Toss the salad and the dressing. Serve with pita chips for scooping up the salad. Enjoy!

Kitchen notes

Persian cucumbers are crunchy, sweet, and have almost no seeds. Any variety will work here, but we prefer Persian. Measure with your heart! Love tomatoes? Add as many as you like. The “salad” portion of this recipe can accommodate different proportions of ingredients, depending on what you love and don’t love. Don’t hold back! For extra crunch and more vegetables, you can also add finely chopped crunchy lettuce, such as romaine, and micro-chopped red radishes.

What Does Micro-Chopped Mean?

Micro-chopping means fine-dicing the vegetables into small, fairly even pieces instead of leaving them in big salad chunks. The goal is to get a little bit of everything onto each pita chip, which is what makes this micro-chopped salad so fun to eat.

You still want each ingredient to have its own texture, so don’t mince the tomatoes and cucumber into a wet relish. The chickpeas, olives, and pepperoncini don’t need to match the vegetables exactly in size.

The main thing to remember is that smaller pieces make the salad easier to scoop and help the dressing coat every bite evenly, so you get a little taste of everything in each bite.

Ingredients and Smart Swaps

Chickpeas and vegetables: This salad starts with canned chickpeas, Persian cucumber, red onion, tomatoes, and bell pepper. We especially love Persian cucumbers here because they’re crunchy, slightly sweet, and nearly seedless, but any cucumber variety will work.

Greek-inspired additions: Kalamata olives, fresh dill, and optional pepperoncini add so much flavor. This isn’t a traditional Greek salad—the chickpeas, chopped format, and creamy dressing are our little twist. If you’re craving the classic version, try our authentic Greek salad.

Creamy feta dressing: The dressing is made with Dijon or honey Dijon, olive oil, feta, fresh lemon juice, pepperoncini brine (or extra lemon juice), honey or maple syrup, salt, and pepper. You can also add a little water if you need to thin it out.

(If you whisk the dressing by hand, expect tiny feta crumbles and a slightly more textured finish than you’ll get from blending.)

Make it your own: You can add extra tomatoes, finely chopped romaine, or micro-chopped red radishes depending on what you love or have on hand.

Pita chips: Store-bought pita chips make this straightforward, but you can also make your own with pita, olive oil, salt, pepper, and a sprinkle of sumac.

Kitchen tip

Keep everything chopped small enough to scoop onto a chip, but not so tiny that those juicy veggies disappear into the dressing.

Keeping leftovers

Want to get a head start? This recipe is pure meal-prep magic. You can prep the veggies and dressing up to a day ahead and keep them refrigerated separately. Toss everything together close to serving, and keep those pita chips on the side so they stay nice and crunchy.

Store undressed components separately in the fridge for up to 2 days keeping in mind that the veggies will soften and release more liquid as they sit. Once dressed, this salad is best enjoyed the same day while everything is fresh and scoopable.

Questions

What is a micro-chopped salad?

It’s a salad with vegetables cut into small, fairly even pieces so several ingredients can fit into each bite. For this version, the tiny pieces make the chickpea salad easier to scoop onto pita chips.

Can we use a different cucumber?

Yes. Persian cucumbers are our personal preference because they’re crunchy, sweet, and have few seeds, but any cucumber variety will work.

Do we need a blender for the feta dressing?

No. A blender makes the feta dressing creamy and smooth. The recipe also includes a hand-whisked option that will have tiny pieces of feta rather than the same fully blended texture.

Can we use store-bought pita chips?

Yes. Pita chips are the serving suggestion, and the homemade chip recipe is optional. Bake the chips only if you want to make them yourself; the salad itself requires no cooking.

Can we add other vegetables?

Yes. You can add finely chopped romaine or micro-chopped red radishes for extra crunch. You can also adjust the type and quantity of vegetables to suit your taste. Whether you like a little more tomato or a little less onion, it’s straightforward to make this recipe your own.
