These Patatas Bravas are incredibly crispy, even though they are baked not fried! Topped with a rich, smoky salsa brava and a creamy garlic aioli, they are absolutely addictive and perfect for any occasion.
Ingredients
For The Potatoes:
- 2 and 1/2 pounds Yukon gold potatoes, cut into 3/4 inch dice
- 1/2 teaspoon baking soda
- 1/4 cup olive oil
- Salt to taste
- Pepper to taste
- Chopped parsley for garnish, optional
For The Salsa Brava:
- 2 tablespoons olive oil
- 28 ounce can crushed tomatoes
- 3 garlic cloves, minced
- 1 sweet or yellow onion, diced
- 2 teaspoons Spanish smoked paprika
- 1/4 teaspoon cayenne pepper or to taste
- 2 to 3 dashes hot sauce to taste
- Salt to taste
For The Garlic Aioli:
- 1/4 cup good quality mayonnaise
- 1 garlic clove, grated or pressed
- 1 teaspoon lemon juice
Instructions
For The Potatoes:
- Place a large baking sheet in a cold oven and preheat the oven to 500 degrees Fahrenheit. Ensure the baking sheet heats up with the oven for best results.*
- Add baking soda and a generous pinch of salt to a large pot of water and bring it to a rolling boil.
- Once the water is boiling, add the diced potatoes, cover the pot, and bring it back to a boil. As soon as the water is boiling again, set a timer for 1 minute.
- After exactly one minute of boiling, immediately drain the potatoes in a colander.
- Return the drained potatoes to the empty pot. Stir them gently for about 30 seconds to rough up their surface slightly. Then, add 1/4 cup olive oil, salt, and pepper. Toss well to ensure the potatoes are fully coated.
- Carefully remove the hot baking sheet from the oven and pour the seasoned potatoes onto it, arranging them in a single layer to ensure even crisping.
- Return the baking sheet to the oven and bake for 15 minutes.
- Remove the sheet from the oven and use a sturdy spatula to flip and spread the potatoes. Return to the oven for another 15-25 minutes, or until the potatoes are beautifully golden brown and intensely crispy.
For The Salsa Brava:
- Heat 2 tablespoons of olive oil in a large sauté pan over medium heat.
