Grated Egg Avocado Toast

This viral Grated Egg Avocado Toast trend is a game changer. By grating the egg, the texture is spot on and we find it a lot more appetizing to eat. Our recipe was inspired by @healthyishfoods on TikTok. We put our own little spin on it by toasting the bread with mayo to make it extra crispy and.

What stands out

If you like eggs and toast you’ll love our Grated Egg Avocado Toast! It’s a fun spin on a classic combo and takes a basic breakfast to the next level. Add a little smear of mayo to the toast makes it even crispier, and we love the creaminess from the avocado. By finely grating the hard-boiled egg, the egg is so fluffy and light, it’s the bite!

How to Prepare Grated Egg Avocado Toast

Start by boiling 4 eggs in a medium pot on the stove, until hard-boiled. (For a step-by-step, check out our tutorial here: Boiling and Peeling Eggs Perfectly).

Then, add the eggs to an ice water bath to cool them down quickly and completely.

Once they are cold, peel them and then set them aside.

Slice your bread of choice and smear a little bit of mayo on each slice.

In a hot pan place the slices of bread mayo side down and let them crisp up, then remove off the heat.

In a separate bowl mix the avocado with a touch of salt and a squeeze of lemon juice.

Spread the avocado mash onto the toast and then use a zester to gently grate the eggs on top.

Finally, sprinkle with some black pepper or add hot sauce to taste and enjoy!
