When we're craving a sweet snack that also fits into our low-carb, high-protein diet, this Cottage Cheese Fruit Salad always hits the spot. Similar to the savory version of this recipe, this salad uses a mixture of vibrant, nutrient-rich fruits which get evenly diced up until they resemble little gems. The stunning salad is laid on a bed of cottage cheese, which is rich in protein and helps balance blood sugar. This is an ideal summertime treat, when stone fruit is ripe and abundant!
What stands out
If you love fruit salad, but not the massive blood sugar spike that comes with it, we've got a hack for you. Pairing high-protein cottage cheese will balance your meal, and the combination of sun-sweetened stone fruit with creamy, rich dairy creates a match made in heaven. This salad tastes like a sweet treat but remains quite nutritionally balanced. All the multicolored fruit makes for a stunning presentation, as well.
How to Prepare Cottage Cheese Fruit Salad
Spread the cottage cheese onto a plate and set aside.
Pass the fruit through the veggie chopper or dice it finely.
Next squeeze a little bit of lime juice on top of the fruit and add a drizzle of hot honey.
Then, spoon the fruit salad on top of the cottage cheese and add an additional drizzle of hot honey on top. Lastly garnish with fresh herbs, such as lemon thyme or mint.
And finally enjoy as is or serve with tortilla chips!
Kitchen tip
No veggie copper no problem. With a little patience and time, you can finely dice the ingredients with a knife and a cutting board.
Swaps
- Instead of cottage cheese you can also try ricotta cheese or plain yogurt.
- Use any fruits you love. Just keep it colorful! Generally, we like to use anything with a bit of a bite to it (no bananas): melons, pears, nectarines, and so much more work well here too.
- A little lime zest is a nice addition here. use a zester to remove some of the outer peel prior to juicing the lime.
- We like to enjoy this salad as-is, with a spoon or fork OR scooped onto tortilla chips.
Serve it with
- This is the dessert or side dish to include in a brunch buffet. We would serve alongside our Zucchini Egg Bake and Potato Hash.
- If you have an excess of stone fruit, you can also try making our Fruit LeatherCherry Juice or Fruit Compote.
- We love to enjoy this treat with a refreshing glass of iced tea or coffee.
