  • 2 cups white whole wheat flour (240 g) – Substitute regular whole wheat flour, whole wheat pastry flour or All-Purpose Flour if you wish.
  • 1 teaspoon baking powder (4g)
  • 1 teaspoon baking soda (5 g)
  • ½ teaspoon fine sea salt (3 g)
  • 1 teaspoon ground cinnamon (3 g) (optional)

Wet ingredients

  • 3 mashed bananas (379 g)
  • ¼ cup melted butter (57 g)
  • 1/2 cup pure maple syrup (165 g)
  • 2 eggs (105 g)
  • 1/2 cup plain Greek yogurt (113 g)
  • ½ cup sourdough discard (113 g)
  • 2 teaspoons vanilla extract (4 g)

Optional Mix-in

  • 1 cup mini chocolate chips, divided

Instructions

  1. Preheat oven to 425°F degrees. Line a 12-count muffin pan with parchment (not paper) muffin liners or spray with nonstick spray. Set aside.
  2. In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt. Set aside.
  3. In a second, larger bowl, thoroughly mix the mashed bananas, sourdough discard, maple syrup, yogurt, eggs, melted butter, and vanilla together until the mixture is smooth and well combined.
  4. Pour the dry ingredients into the wet ingredients and stir gently until just combined. It is very important not to overmix the batter; overmixing will result in tough muffins. A few lumps are perfectly acceptable.
  5. If using, set aside about 1/4 cup of mini chocolate chips to sprinkle on the muffin tops. Mix the remaining 3/4 cups of mini chocolate chips into the batter, stirring only once or twice to distribute them without overmixing.
  6. Evenly distribute the batter between the 12 muffin cups. (An ice cream scoop is very helpful for easy and consistent portioning). If desired, sprinkle the reserved mini chocolate chips on top of each muffin. Muffin cups should be filled almost to the top.
  7. Bake for 5 minutes at 425°F degrees. Keeping the muffins in the oven, immediately reduce the oven temperature to 350°F and continue to bake for another 12-17 minutes, or until a wooden toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs attached.
  8. Once done, remove the muffins from the oven and transfer them to a cooling rack as soon as possible to prevent them from becoming soggy in the pan.
