Welcome to the ultimate indulgence for two: a rich and chewy Chocolate Chip Cookie Blondie Skillet Sundae. This delightful dessert offers the perfect solution for those moments when a sweet craving strikes, but the thought of baking a massive batch is simply overwhelming. Imagine a warm, thick, and perfectly baked chocolate chip blondie, served straight from a mini cast-iron skillet, generously crowned with your favorite ice cream and drizzled with a decadent, velvety chocolate sauce. It’s a treat designed to satisfy any sweet tooth, without leaving you with excessive leftovers or the guilt of overindulgence.

For too long, the idea of baking has been synonymous with large yields – dozens of cookies, huge cakes, or family-sized pies. But what if you’re a single person, a couple, or a small family who simply wants a freshly baked treat without the commitment of an entire dessert buffet? This is where the magic of small-batch baking truly shines, and it’s a concept that has become an absolute game-changer in my kitchen. As a dedicated home baker, I often find myself in a baking frenzy around the holidays, creating an abundance of festive treats like soft and chewy ginger cookies. However, for everyday cravings, my husband and I faced a common dilemma: baking a full recipe meant either overeating or letting delicious leftovers go stale. Neither option was appealing, especially when thinking about the next time we stepped on the scale.

My excitement was palpable when I discovered that my talented friend Tracy, the creative mind behind Baking Mischief, was publishing a cookbook dedicated entirely to small-batch baking. Even more thrilling was her invitation for me to review the cookbook and share its wonders with you. The book, titled Baking for Two: The Small-Batch Baking Cookbook for Sweet and Savory Treats, is an absolute treasure for anyone seeking to enjoy homemade goodies in perfectly portioned amounts. You can easily order your copy HERE!
This remarkable cookbook caters specifically to singles, couples, and small families who appreciate the joy of fresh baking but prefer not to contend with massive quantities. It’s a comprehensive guide, brimming with an incredible array of recipes for everything from cookies, cakes, and muffins to pies, tarts, and even savory baked delights. Each recipe is crafted to be quick, easy to prepare, and undeniably delicious, making home baking accessible and enjoyable for everyone. Imagine whipping up a batch of six perfect chocolate chip cookies or a mini cheesecake without the pressure of having to share (unless you want to!). The book truly redefines the home baking experience, focusing on quality and convenience over quantity.

Flipping through the pages of Baking for Two was an experience in delightful indecision. So many enticing options vied for my attention: Cream Cheese Pumpkin Bread, elegant White Confetti Cupcakes with Whipped Vanilla Buttercream, or perhaps just a classic batch of Chocolate Chip Cookies (but this time, a manageable six cookies!). It was a truly difficult choice, given the sheer variety and appeal of each recipe. However, my heart ultimately settled on this irresistible Chocolate Chip Cookie Blondie Skillet Sundae. My weakness for mini skillets is well-known, and the thought of a warm, gooey chocolate chip blondie, fresh from the oven, lavishly topped with melting ice cream and a rich, dark fudge sauce? That was a combination I simply couldn’t resist. It perfectly encapsulated the cozy, comforting, and portion-controlled indulgence that small-batch baking promises.

Beyond its delicious outcome, what truly impressed me about this recipe was its incredible simplicity and minimal fuss. The entire blondie batter comes together swiftly in just one bowl, streamlining the preparation process significantly. This means not only are you baking a small batch, but the effort involved is remarkably minimal, and perhaps best of all, there’s hardly any mess to clean up afterward. It’s the kind of recipe that makes you wonder why you ever hesitated to bake on a smaller scale. The convenience factor alone makes it a winner, proving that decadent desserts don’t require extensive kitchen adventures or a sink full of dirty dishes.

- 1 large scoop ice cream of choice for serving
Instructions
-
Preheat oven to 350°F
To Make Chocolate Chip Blondie:

In a medium bowl, whisk the melted butter, egg yolk, brown sugar, and vanilla until well combined.

Stir in the flour, baking powder, and salt. Fold in the chocolate chips. Spread the batter into a six-inch cast iron skillet.

Cool for at least 5 minutes, until the skillet can be safely handled.

-
In a 1 quart saucepan over medium heat, combine the butter, 1 tablespoon of heavy cream, the granulated sugar and vanilla. Stir until the butter is melted and the mixture begins to simmer.

-
Add the remaining 1/2 tablespoon of heavy cream, half a teaspoon at a time, until the sauce reaches the desired consistency. Remove from heat.
