  • ¼ cup low sodium soy sauce
  • ¼ cup honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon ginger root grated
  • 4 garlic cloves minced
  • 1 teaspoon Sambal Oelek

FOR THE CHICKEN STIR FRY:

  • 1 ½ pounds chicken thighs Cut into 1 inch pieces
  • cup corn starch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 8 ounces snap peas
  • 1 red bell pepper thinly sliced
  • 1 large carrot peeled and thinly sliced into coins
  • 2 tablespoons refined avocado oil
  • 1 teaspoon sesame seeds optional for garnish

Instructions

  1. Whisk together all ingredients for the sauce, set aside.
  2. Toss the chicken with the cornstarch, salt and pepper, until fully coated. Set aside.
  3. Heat a sauté pan over medium high heat. Add one tablespoon of oil. Add the bell pepper, snap peas, and carrots. Cook, stirring often, until starting to brown and blister, 4-5 minutes. Remove from pan and set aside.
  4. Add the second tablespoon of oil to the pan. You may need to adjust heat as you cook, it should be hot but turn the pan down if the bottom starts to burn while browning chicken. Add the chicken, but do not overcrowd the pan. Cook in two batches if necessary. Cook chicken 3-4 minutes per side, until cooked through.
  5. Add the vegetables back to the pan with the chicken. Pour in the sauce. Stir, scraping up any browned bits on the bottom of the pan. Cook for 2-3 minutes, until everything is fully coated and the sauce has thickened. Garnish with sesame seeds and serve over rice if desired.
