This culinary journey begins with a sponsored conversation written by me on behalf of Fred Meyer. All opinions and text are entirely my own, shaped by years of enjoying this simple pleasure.
A Childhood Memory, A Lifelong Craving
Some of my fondest childhood memories revolve around special outings with my mom. One particular treat was a visit to a charming cafe called The Perfect Cup. These were rare occasions, usually after a successful shopping trip, when we’d indulge in a little extra luxury. Nestled amidst the cheerful hustle and bustle of the cafe, with our shopping bags beside us, I’d feel incredibly grown-up. My order was always the same: a New York Soda and, crucially, a ham and cheese croissant. It wasn’t just a sandwich with ham and cheese on a croissant; this was the real deal—savory ham and wonderfully melty cheese baked right into the buttery, flaky layers of the croissant itself.
I distinctly remember the first time I tried it. I’m still not sure what prompted me to order something so unfamiliar, but from that moment on, no other item on the menu could tempt me. That exquisite combination of salty ham, rich cheese, and delicate pastry instantly became a cherished favorite. Even decades later, the sight of a ham and cheese croissant on a cafe menu still calls to me, promising a delightful bite of nostalgia and comfort.

From Holiday Feast to Everyday Delight: Reinventing Leftover Ham
The idea of making my own ham and cheese croissants never really crossed my mind until I found myself facing a delightful, yet challenging, predicament: an abundance of leftover Fred Meyer Flame Crafted Ham after a festive holiday meal. This particular ham, with its sweet and smoky glaze, is a true star on its own, easily serving 11-14 people. While incredibly delicious, even the most devoted ham lovers in my household start to crave variety after a few consecutive meals. We’ve certainly enjoyed it in frittatas, and it makes a fantastic addition to a cheesy pasta bake. However, my thoughts kept drifting back to that beloved cafe classic – the ham and cheese croissant.
Leftover ham is a culinary treasure, offering a fantastic base for countless dishes beyond just sandwiches. Its inherent savory flavor and often tender texture make it incredibly versatile. Whether you have honey-glazed, spiral-cut, or smoked ham, transforming it into a new, exciting meal prevents food waste and invigorates your dinner table. This recipe for ham and cheese croissants is arguably one of the most delightful ways to give new life to your holiday leftovers, turning them into a meal that feels entirely fresh and indulgent.

The Genius Shortcut: Puff Pastry Power
For regular readers of this blog, you know my philosophy: simple, quick, and easy meals are always a priority. Authentic croissants, while undeniably magnificent, are far from simple or quick. The traditional lamination process, involving countless folds of butter into dough, is a labor of love that requires significant time, patience, and skill. The result—an incredibly airy, buttery, and shatteringly crisp pastry—is absolutely worth the effort for special occasions.
However, for those of us who yearn for that croissant experience without dedicating an entire day to dough preparation, there’s a brilliant and utterly delicious shortcut: frozen puff pastry. Is it identical to a traditional croissant? No. Puff pastry offers a different, yet equally delightful, flakiness. Its layers, created by alternating butter and dough, expand dramatically when baked, resulting in a light, airy, and wonderfully buttery texture that perfectly mimics the *feel* of a croissant without the intensive work. It’s a kitchen marvel that turns complex baking into an accessible, everyday pleasure, allowing you to achieve impressive results in a fraction of the time.
Using puff pastry makes these 4-ingredient Easy Ham and Cheese Croissants the perfect recipe to whip up the morning after a big holiday dinner. It requires minimal effort and only a few minutes of active preparation, leaving you more time to relax and enjoy the extended festivities. This magical ingredient transforms leftover ham into a sophisticated yet simple meal that can be enjoyed at any time of day.

The Perfect Pair: Ham and Gruyère
The choice of Gruyère cheese in this recipe is not accidental; its distinctive flavor profile creates a harmonious symphony with the ham and buttery puff pastry. Gruyère is a hard yellow Swiss cheese named after the town of Gruyères in Switzerland. It boasts a rich, creamy, and slightly nutty flavor, with a complex aroma that can range from sweet and fruity to earthy and robust, depending on its age. When melted, Gruyère becomes beautifully smooth and gooey, but retains a hint of its characteristic sharpness. This slight sharpness is key, as it elegantly cuts through the richness of both the ham and the buttery pastry, ensuring each bite is perfectly balanced and never overwhelming.
To ensure the best possible results and minimize cheese leakage onto your baking sheet, I highly recommend cutting the Gruyère into small batons rather than grating it. Grated cheese tends to melt and spread more rapidly, making it prone to escaping the pastry as it bakes. By using batons, the cheese holds its shape better, melting slowly within the croissant’s confines, resulting in those desirable pockets of warm, gooey cheese. While some cheese may still inevitably melt out – a small price to pay for such deliciousness – a crucial tip is to always line your baking sheet. Silpat baking mats are excellent for this, offering a non-stick surface and easy cleanup. Alternatively, parchment paper works wonderfully to prevent sticking and save you from a messy aftermath.

Serving Suggestions and Versatility
These Easy Ham and Cheese Croissants are incredibly versatile. While they make an undeniable star for breakfast or brunch, consider them for a delightful light lunch paired with a crisp green salad and a simple vinaigrette. They also elevate a casual dinner, especially when accompanied by a glass of chilled white wine. For an even heartier meal, a side of roasted vegetables or a comforting bowl of tomato soup would be perfect.
Beyond the classic combination, don’t hesitate to experiment with variations. A thin smear of Dijon mustard on the puff pastry before adding the ham and cheese can add a wonderful tangy kick. Fresh herbs like chives or thyme, finely chopped, can introduce an aromatic layer. For a different cheese experience, swap Gruyère for sharp cheddar or Swiss cheese. You could even add a sprinkle of caramelized onions or a thin slice of apple for a touch of sweetness.

- Rating: 5 out of 5 stars (from 3 votes)
- Prep Time: 10 mins
- Cook Time: 15 mins
- Total Time: 25 mins
- Servings: 6 Servings
Ingredients
- 1 sheet frozen puff pastry, slightly thawed*
- 12 ounces ham, cut into narrow slices (approximately 2 ounces per croissant)
- 4 ounces Gruyère cheese, cut into batons** (approximately 1/2 an ounce per croissant)
- 1 egg
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with a Silpat mat or parchment paper, and set it aside.
- On a lightly floured surface, use a rolling pin to gently roll the thawed sheet of puff pastry into a rectangle, approximately 10-11 inches long.
- Carefully cut the puff pastry rectangle into 6 narrow triangles.
- At the wide end of each triangle, place a few slices of ham and a few batons of Gruyère cheese. The exact amount will vary slightly depending on the size of your triangles, aiming for about 2 ounces of ham and 1/2 an ounce of cheese per pastry.
- Starting from the wide end of each triangle, roll the dough towards the pointed end, snugly wrapping the ham and cheese as you go to form the croissant shape.
- Place each rolled croissant onto the prepared baking sheet. In a small bowl, whisk the egg until it’s well scrambled. Brush the egg wash evenly over the top of each croissant. This will give them a beautiful golden sheen.
- Bake for 15-18 minutes, or until the croissants are beautifully golden brown and puffed.
- Serve warm and enjoy!
Notes
- *To properly thaw puff pastry, allow it to sit at room temperature for about 30-40 minutes. It should be pliable enough to roll without cracking, but still cool to the touch. If it thaws for too long, the butter layers can melt, which may prevent the dough from becoming as flaky.
- **Cutting the cheese into batons rather than grating it helps prevent excessive melting and oozing out of the croissants during baking. Despite this, some cheese may still melt out, so ensuring your baking sheet is lined is essential for easy cleanup.
