Crepe Lasagna Bake

You’ve likely enjoyed classic lasagna, but prepare yourself for an extraordinary culinary journey with a dish that reimagines this beloved comfort food: Lasagna with Crepes. This innovative creation, born from my mom’s ingenious kitchen experiments, transformed a simple search for cannelloni in Bulgaria into one of our family’s most cherished and flavorful meals. Unable to find traditional cannelloni shells, she ingeniously decided to use delicate crepes, rolling them with a savory meat and creamy cheese filling, then assembling them much like a lasagna. The result? A truly unforgettable dish that quickly became a family legend. She immediately called me, raving about this delectable discovery, and now, I’m thrilled to share this incredible recipe with you on the blog!

Why Lasagna with Crepes Will Become Your New Favorite

Lasagna with Crepes isn’t just a meal; it’s an experience that takes classic comfort food to a whole new level. Forget everything you know about traditional layered lasagna sheets; this dish offers a delightful twist that will captivate your taste buds. Imagine thin, incredibly delicate crepes, each meticulously stuffed with a rich, flavorful beef (or pork) filling, generously oozing with melted mozzarella cheese. The subtle sweetness and tender texture of the crepes create a remarkable contrast with the savory filling and sauces, offering a sophisticated yet deeply satisfying meal. This unique crepe recipe is so incredibly delicious and satisfying, you might not even realize, or certainly won’t miss, the absence of conventional lasagna noodles. It’s truly what culinary dreams are made of!

Crafting Your Lasagna with Crepes: A Step-by-Step Guide

Embark on creating this exceptional dish by preparing each component with care. The beauty of this recipe lies in the thoughtful layering of flavors and textures.

1. Prepare the Delicate Crepes

The foundation of this dish is a batch of perfectly thin, savory crepes. For an authentic and easy recipe, please follow my Easy Crepe Recipe. Remember, for this particular lasagna-style dish, it’s crucial that your crepes are plain and unsweetened, without any added sugar or vanilla extract, to complement the savory fillings. Once your crepes are cooked, set them aside to cool while you prepare the other elements.

2. Master the Creamy Bechamel Sauce

A luxurious bechamel sauce is key to the dish’s irresistible creaminess. In a sturdy pot on the stove, over medium heat, gently melt the butter. Once the butter has completely melted and begins to shimmer, slowly stir in the flour. Continue stirring constantly with a whisk or wooden spoon until a thick, golden paste, known as a roux, forms. This roux is vital for thickening the sauce and preventing lumps. Next, gradually whisk in the milk, adding it slowly to ensure a smooth consistency. Keep whisking diligently until the sauce begins to thicken to a luscious consistency that coats the back of a wooden spoon. Season with a pinch of salt to taste. Remove the bechamel from the heat and set it aside.

3. Prepare the Rich Meat Filling

The savory heart of this dish is a robust meat filling. Begin by finely dicing your carrots and onion, and mincing the garlic cloves. Precision in chopping ensures even cooking and consistent flavor throughout. Heat olive oil in a large pan on the stove over medium-high heat until it shimmers. Add the finely diced onions, carrots, and minced garlic to the hot oil. Sauté these aromatics until they are softened and fragrant, typically for about 5-7 minutes. Then, add the ground meat (beef or pork work wonderfully) to the pan, breaking it up with a spoon as it cooks. Continue cooking for approximately 10 minutes, or until all the liquid has evaporated and the meat is beautifully browned. This step is crucial for developing deep, rich flavors. Reduce the heat to medium-low, then stir in the tomato paste, allowing it to cook for a minute to intensify its flavor. Season the mixture generously with oregano, paprika, and salt. Stir well to combine. Finally, sprinkle in the flour and pour in the vegetable broth (or water), stirring until the mixture thickens slightly. Cook for another minute, then remove the pan from the heat.

4. Assemble and Bake to Golden Perfection

Preheat your oven to 400°F (200°C). Lay each crepe flat on your work surface. Spoon approximately three tablespoons of the meat filling onto each crepe, followed by a generous sprinkle of grated mozzarella. Carefully and tightly roll each crepe into a compact package, similar to cannelloni. The amount of filling may vary slightly depending on the size of your crepes, so feel free to adjust. In a 9×13 inch baking dish, spread one to two ladles of your favorite marinara sauce evenly across the bottom. This base layer prevents sticking and adds moisture. Gently nestle the filled crepes into the baking dish, arranging them snugly together. Next, pour the creamy bechamel sauce over the rolled crepes, ensuring an even coating. Spoon a little more marinara sauce over the bechamel, then finish with a generous sprinkle of grated Parmigiano cheese and additional mozzarella. Bake the Lasagna with Crepes, uncovered, in the preheated oven for about 40 minutes, or until the top is beautifully bubbly and golden brown. Allow the dish to cool slightly before serving to let the flavors meld and the cheese set. Enjoy this spectacular comfort food!

Nonna’s Essential Tip: The Power of Mise en Place 🔪

For a recipe with multiple components like Lasagna with Crepes, practicing “mise en place” is not just a suggestion – it’s a game-changer. This French culinary phrase literally means “everything in its place,” and it’s the secret to a smooth, stress-free cooking experience. Before you even turn on the stove, take the time to measure, chop, dice, and organize all your ingredients. This means your carrots, onions, and garlic should be prepped, your butter and flour measured, and your sauces ready to go. By having everything laid out and ready, you eliminate frantic searches for ingredients, prevent cooking mishaps, and ensure a seamless flow in the kitchen. Creative Variations and Simple Substitutions for Your Crepe Lasagna

While the classic Lasagna with Crepes recipe is perfection, feel free to get creative and adapt it to your taste or dietary needs. Here are some ideas to inspire you:

  1. **Simplified Assembly:** If rolling individual crepes feels too time-consuming, you can absolutely make your life easier by assembling this dish exactly as you would a traditional lasagna. Simply layer the crepes flat in your baking dish, alternating with layers of meat filling, bechamel, and marinara sauce. It will taste just as incredible, with a different, equally appealing presentation.
  2. **Dietary Considerations:** Unfortunately, this specific recipe does not currently offer dairy-free or gluten-free substitutes due to the integral role of dairy in the bechamel and flour in the crepes. However, if you have a reliable gluten-free crepe recipe and a dairy-free bechamel sauce recipe that you love, please don’t hesitate to experiment! We would love to hear how your adaptations turn out in the comments below.
  3. **Tomato Sauce Choices:** You are welcome to use any marinara sauce you enjoy. While we pride ourselves on making our own rich sugo with our homemade tomato sauce, a high-quality store-bought option like Rao’s will work beautifully and save you time without compromising on flavor.
  4. **Crepe Adaptations:** When preparing your crepes, ensure they are entirely savory. It’s crucial not to add any sugar or vanilla into the batter, as these sweet notes would clash with the savory meat and cheese filling. If using your own crepe recipe, simply omit any sweetening agents.
  5. **Traditional Lasagna Sheets:** If you prefer the classic texture, you are more than welcome to use traditional lasagna sheets instead of crepes. Simply follow the assembly instructions, substituting the crepes with cooked lasagna noodles. This offers a comforting twist on a traditional favorite.
  6. **Boost Your Veggies:** For an extra layer of flavor, nutrition, and texture, consider adding finely diced bell peppers (any color!), savory mushrooms, or tender zucchini to your meat filling. These vegetables will cook down beautifully and enhance the overall depth of the dish.

Your Questions Answered: FAQs About Lasagna with Crepes

Can I make this recipe dairy-free or gluten-free?

Currently, I do not have specific dairy-free or gluten-free substitutes developed for this particular dish. Both the crepes and the bechamel sauce rely heavily on dairy and gluten for their texture and consistency. However, if you have a tried-and-true gluten-free crepe recipe and a successful dairy-free bechamel sauce alternative, I encourage you to experiment! Please share your results in the comments; your insights could be invaluable to others.

Can I prepare this lasagna with crepes recipe ahead of time?

Absolutely! This recipe is fantastic for meal prep. You can prepare all the individual components a day in advance. My mom often makes the bechamel sauce, the meat filling, and the crepes the day before. Simply cover each component well and store them separately in the refrigerator. When you’re ready to bake, gently warm the meat filling and bechamel sauce, then proceed with assembling and baking the dish as instructed. This makes for a quick and easy assembly on a busy day.

What type of tomato sauce should I use for this recipe?

For the richest flavor, I recommend using our traditional, homemade Italian tomato sauce (sugo). However, any high-quality canned or jarred marinara sauce you enjoy will work well. When choosing a store-bought option, look for one with minimal ingredients and a robust tomato flavor to ensure the best results.

Can I use store-bought crepes for this recipe?

Yes, absolutely! Using store-bought crepes is a great time-saver. Just ensure that the crepes are plain and unsweetened, as any sweet flavor would not complement the savory meat and cheese filling in this lasagna-style dish.

What type of meat can I use for the filling?

This recipe is versatile when it comes to the meat filling. You can use ground beef, pork, chicken, or turkey. For a delicious plant-based alternative, you can also opt for a plant-based ground meat substitute. Choose your favorite to tailor the dish to your preference.

Can I freeze this lasagna with crepes?

Yes, just like a traditional lasagna, this crepe lasagna freezes beautifully. Assemble the crepes in your baking dish, cover them tightly with plastic wrap and then aluminum foil, and freeze for up to two months. When you’re ready to enjoy it, thaw the dish in the refrigerator overnight before baking it according to the instructions. This makes it an excellent option for future meals!

Can I add other vegetables to the meat filling?

Definitely! Enhancing the meat filling with additional vegetables is a fantastic idea for extra flavor, texture, and nutrition. Diced bell peppers (red, yellow, or orange), sliced mushrooms, or grated zucchini would all be excellent additions. Simply sauté them along with the onions and carrots to soften before adding the ground meat.

  • 10 tablespoon mozzarella

Additional Ingredients

  • 1 cup tomato sauce, we used homemade sugo
  • ¼ cup grated Parmigiano Reggiano cheese, measure with your heart
  • ½ cup grated mozzarella, measure with your heart

Instructions

Crepes

  • Prepare the crepes according to my recipe here: https://themodernnonna.com/easy-crepe-recipe/. Alternatively, you can use any preferred savory crepe recipe. Ensure that your chosen crepe recipe does not include pure vanilla extract or any other sweetening agents.

Bechamel Sauce

  • In a pot on the stove over medium heat, add the butter. Allow it to melt and shimmer. Once the butter is fully melted and bubbly, stir in the flour until a thick paste (roux) forms. Gradually add the milk while continuously whisking to ensure a smooth consistency.
  • Continue whisking until all the milk is incorporated and the sauce has thickened sufficiently to coat the back of a wooden spoon. Remove the pot from the heat and set aside.

The Meat Filling

  • In a large pan on the stove over medium-high heat, add the olive oil and allow it to heat up. Add the finely diced onions and carrots, and sauté until softened. Stir in the minced garlic. Add the ground meat and break it up with a spoon as it cooks. Fry the ground meat for approximately 10 minutes, or until all the water has evaporated and the pan appears dry.
  • Once the water has evaporated, reduce the heat to medium-low. Stir in the tomato paste. Add the oregano, paprika, and salt, stirring well to combine. Incorporate the tablespoon of flour and the vegetable broth (or water).
  • Continue to cook for about another minute until the mixture thickens. Remove the meat filling from the heat.

Assembling the Crepes

  • Preheat your oven to 400°F (200°C).
  • Select a 9×13 inch baking dish, or any dish that can accommodate approximately 10 rolled crepes snugly.
  • Place a crepe onto a plate or your clean work surface. Add approximately 3 tablespoons of the prepared meat filling, followed by a sprinkle of grated mozzarella cheese. Carefully roll the crepe tightly to form a cylindrical shape. Repeat this process until all the crepes are filled and rolled. Adjust the filling quantity based on your crepe size.
  • Spread 1-2 ladles of marinara sauce evenly across the bottom of your baking dish. You can use a high-quality store-bought marinara sauce (like Rao’s) or homemade Italian sugo, such as one made from our annual homemade tomato sauce.
  • Carefully arrange the filled and rolled crepes into the baking dish, ensuring they are nestled tightly together.
  • Pour the prepared bechamel sauce over the top of the crepes, spreading it out evenly with a spoon to ensure full coverage.
  • Spoon a little more tomato sauce over each crepe, then generously sprinkle with grated Parmigiano cheese and additional grated mozzarella. Use good quality cheeses for the best flavor.
  • Bake the dish, uncovered, in the preheated 400°F (200°C) oven until it is bubbly and golden brown. Baking time may vary depending on your oven, but typically takes around 40 minutes.
