Why These Make-Ahead Beef Breakfast Burritos are a Must-Have

Beyond the sheer convenience, these burritos offer a wealth of benefits. First, they are incredibly satisfying. The combination of tender shredded beef, hearty potatoes, and protein-packed eggs keeps you feeling full and energized throughout the morning, preventing those mid-morning slumps and unhealthy snack cravings. Second, they are surprisingly simple to customize. While our recipe provides a fantastic base, you can easily adjust the spices in the beef, add different vegetables to your breakfast potatoes, or experiment with various cheeses to suit your preference. This flexibility makes them a staple that never gets boring.

Furthermore, meal prepping these burritos helps you maintain a healthier diet. Instead of reaching for sugary cereals or greasy fast-food options, you have a wholesome, homemade meal readily available. The high protein content from the beef and eggs is crucial for muscle development and sustained energy, making these an excellent choice for athletes, growing kids, or anyone looking to boost their protein intake. Making a large batch also means less cooking throughout the week, freeing up valuable time for other activities or simply more relaxation.

Mastering Beef Selection for Perfect Shredded Beef

The star of these breakfast burritos is undoubtedly the flavorful, fork-tender shredded beef. When I set out to create this recipe, I knew slow-cooking was the way to achieve that melt-in-your-mouth texture. My first stop was the meat department at my local Fred Meyer, a treasure trove for quality ingredients.

Navigating the various cuts of beef can sometimes feel overwhelming. Have you ever stood there, pondering which cut is best for your specific recipe? It’s a common dilemma. That’s where resources like the Washington State Beef Commission’s Interactive Butcher Counter come in handy. This innovative online tool allows you to specify what you’re cooking and how you plan to cook it. Based on your input, it recommends the ideal beef cuts. You can even pull it up on your phone while you’re in the store, making on-the-spot decisions a breeze. For this recipe, I indicated I needed a fork-tender cut suitable for a slow cooker, and the tool pointed me towards excellent choices. I ultimately selected a chuck roast, and it performed beautifully, yielding incredibly tender and succulent shredded beef.

Fresh chuck roast, the ideal cut of beef for slow cooking, on a butcher's block before preparation.

The right cut of beef truly makes all the difference in the final outcome of your dish. Whether you’re planning to grill, braise, roast, or pan-fry, selecting the appropriate cut ensures your meal turns out exactly as desired. For low and slow cooking methods, like the shredded beef in this recipe or my Red Wine Beef Stew, a chuck roast is consistently my top choice. Its marbling and connective tissues break down beautifully over time, imparting rich flavor and a tender texture.

Conversely, if I need a quick dinner, a flank steak is perfect, as seen in my Mexican Grilled Flank Steak Salad with Honey Lime Dressing. Flank steak benefits from high-heat, fast cooking to remain tender. It’s crucial to consider your cooking method when choosing beef. Larger roasts with more connective tissue, typically from the larger muscle groups, are naturally tougher and require extended cooking periods to become tender. These cuts are excellent for stews, braises, and slow cooker recipes. For grilling, you generally want thinner, leaner cuts that cook quickly. While a rib eye is a personal favorite for grilling, flank steak offers a more economical yet equally delicious option.

One of the many things I appreciate about shopping at Fred Meyer is the helpfulness of their butcher counter staff. If I can’t locate a specific cut or have questions about preparation, they are always eager to assist. They’ll either direct me to the right spot or check in the back for stock. Moreover, they offer invaluable tips on how to prepare unfamiliar cuts of meat. Never hesitate to ask your butcher for guidance – they are a fantastic resource for ensuring your beef dishes are always a success!

Make Ahead Beef Breakfast Burritos (Freezer Friendly!)

By Meghan McMorrow | Fox and Briar
Prep Time: 1 hour
Total Time: 1 hour
Yields: 14 Servings
Make Ahead Beef Breakfast Burritos, ready for meal prepping.
These Make Ahead Beef Breakfast Burritos are a fantastic freezer-friendly option! Featuring tender, slow cooker shredded beef, hearty breakfast potatoes, fluffy eggs, and savory cheese, they are perfect for preparing in advance and freezing. Simply reheat them in the morning for a quick and satisfying breakfast!

Ingredients

  • 3 ½ cups shredded cheddar cheese
  • 14 burrito-sized flour tortillas
  • Shredded Slow Cooker Beef (see recipe below)
  • Breakfast Potatoes (see recipe below)
  • 24 eggs, scrambled (approximately 1-2 eggs per burrito), divided evenly

Instructions

  1. For optimal results, ensure all individual ingredients are completely cool before assembling the burritos.
  2. To assemble one burrito, fill a tortilla with about ¼ cup shredded cheese, ⅓ cup shredded beef, ⅓ cup breakfast potatoes, and a portion of scrambled eggs (equivalent to 1-2 eggs). Continue this process until all ingredients are used or you have made your desired number of burritos.
  3. Fold in the ends of the tortilla, then roll it tightly. These burritos can be enjoyed immediately or frozen for later. For freezing, wrap each burrito individually in plastic wrap, then place them into a freezer bag. Freeze until you are ready to eat.
  4. To reheat a frozen burrito, remove the plastic wrap and microwave for 3-4 minutes, or until thoroughly heated through. Alternatively, to reheat in a conventional oven, wrap the burrito in foil and bake at 350°F (175°C) for 45 minutes to 1 hour, or until hot.

Notes

The final quantity of burritos is an approximation. The exact number will depend on the amount of beef you have and how much of each ingredient you add to individual burritos. Feel free to adjust based on your needs. I typically use about 2 eggs per burrito, but you can use more or less to your liking.

Breakfast Potatoes

By Meghan McMorrow | Fox and Briar
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Yields: 12 Servings
Crispy and flavorful Breakfast Potatoes with bell peppers and onions.
These hearty and flavorful Breakfast Potatoes are the perfect complement to your breakfast burritos or as a stand-alone side dish. Golden brown and perfectly seasoned, they’re a morning staple.

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and diced into 1-inch cubes
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 6 tablespoons + 2 teaspoons olive oil, divided
  • Pinch red pepper flakes (optional, for a kick)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. To achieve the crispiest potatoes, it is best to cook them in at least two batches to prevent overcrowding the pan. If cooking in batches, prepare half of the ingredients as instructed, then repeat with the remaining half.
  2. Add half of the diced potatoes to a saucepan and season them generously with salt. Cover the potatoes with water, then place a lid on the pan. Bring the water to a rolling boil. Once boiling, allow the potatoes to cook for 5 minutes. Drain the water thoroughly from the potatoes and return them to the pan. Drizzle with 1 teaspoon of olive oil.
  3. Meanwhile, in a large, heavy-bottomed skillet, heat 2-3 tablespoons of olive oil over medium-high heat until shimmering.
  4. Once the skillet is hot, add the par-boiled potatoes, arranging them in a single layer to maximize contact with the hot pan. Allow the potatoes to cook undisturbed for 2-3 minutes, until they develop a beautiful brown and crispy crust on the bottom. Add half of the diced bell peppers and toss or stir to combine, flipping the potatoes to cook evenly.
  5. Continue to cook, stirring frequently, until the bell peppers begin to sear and brown, about 2-3 minutes. Add the onions, and season the pan with salt, pepper, and red pepper flakes (if using) to taste.
  6. Continue cooking, stirring often, until the onions are soft and translucent, and all ingredients are golden brown and cooked through, typically 5-7 minutes.
  7. Remove the cooked potatoes and vegetables from the pan and set aside. If cooking in batches, repeat the process with the second half of your ingredients, adding fresh olive oil as needed.

Pro Tips for Perfect Make-Ahead Breakfast Burritos

To truly elevate your make-ahead breakfast burrito experience, consider these additional tips:

  • Cooling is Key: As noted in the recipe, always allow all cooked components (beef, potatoes, eggs) to cool completely before assembling and wrapping. This prevents condensation from building up inside the tortilla, which can lead to soggy burritos upon reheating.
  • Tortilla Choice: While burrito-sized flour tortillas are standard, don’t be afraid to experiment with whole wheat or even gluten-free options if that suits your dietary needs. Warming the tortillas slightly before filling can also make them more pliable and easier to roll without tearing.
  • Customization Ideas:
    • Veggies: Add sautéed mushrooms, spinach, corn, or black beans to your breakfast potatoes for extra flavor and nutrients.
    • Cheese: Beyond cheddar, try Monterey Jack, pepper jack for a spicy kick, or a Mexican blend.
    • Spice It Up: A dash of your favorite hot sauce or a sprinkle of cayenne pepper in your eggs can add a delightful warmth. Don’t forget to include a small container of salsa or avocado crema for dipping when serving.
    • Fresh Herbs: A sprinkle of fresh cilantro or parsley can brighten the flavors, especially if you add it after reheating.
  • Efficient Freezing: After wrapping each burrito individually in plastic wrap, consider an additional layer of aluminum foil for extra protection against freezer burn, especially if you plan to store them for longer than a few weeks. Labeling each burrito with the date will also help you keep track of freshness.
  • Reheating Variations: While microwave and oven instructions are provided, you can also reheat a burrito in a lightly oiled pan on the stovetop over medium heat, flipping occasionally, until hot and crispy. This method gives the tortilla a wonderful texture. An air fryer is also a great option for a crispy finish.

With these tips and recipes, you’re well on your way to mastering the art of the make-ahead breakfast burrito. Enjoy the convenience, the delicious flavors, and the extra few minutes of sleep these savory creations will bring to your mornings!
