Ingredients

  • 1 pound pasta (penne recommended)
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 8 ounces grated Fontina cheese
  • 8 ounces grated sharp cheddar cheese
  • 4 ounces mascarpone cheese
  • 2 ounces grated Parmesan cheese
  • 3 tablespoons white truffle oil (divided)
  • 4 garlic cloves, pressed or finely minced
  • 1/2 teaspoon paprika
  • 1/8 teaspoon nutmeg
  • Kosher salt to taste (approx. 1/2 teaspoon)
  • Pepper to taste (approx. 1/4 teaspoon)
  • 1 cup panko breadcrumbs
  • Fresh thyme (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly butter a 9×12 inch baking dish and set aside.
  2. Cook pasta according to package instructions until al dente. Drain thoroughly and toss with a small amount of olive oil to prevent sticking. Set aside.

  12. Generously sprinkle the panko breadcrumbs over the top. Drizzle the remaining 1 tablespoon of truffle oil over the breadcrumbs.
