The name of the dish at the restaurant is Zahra, which in Arabic literally means “flower” or “blossom,” often used to refer to cauliflower itself due to its floral appearance. The first time my husband, Mr. Briar, and I visited that restaurant, he emphatically declared that we *had* to order the Zahra. I confess, I wasn’t particularly thrilled by the prospect of a cauliflower dish – it sounded a bit mundane. But I trusted his judgment. Fast forward fifteen minutes, and I simply could not stop eating it. The experience was a powerful reminder that sometimes, just a few simple, high-quality ingredients can come together to create something truly magnificent and utterly delicious. The restaurant’s version of Zahra featured fried cauliflower, offering a unique crispness. However, for home cooking, I opted for roasting. For Yogurt Sauce:
- 1/2 cup Greek yogurt
- 1 tablespoon fresh lemon juice
- 1-2 minced garlic cloves
For Tahini Sauce:
- 2 tablespoons olive oil
- 1/2 cup tahini
- 1/4 cup lemon juice
- 2 garlic cloves, minced
- 1/4 cup warm water
- 1/4 teaspoon Aleppo pepper
- Salt, to taste
- Pepper, to taste
Instructions

Preheat your oven to 425°F (220°C). Prepare a large baking sheet by lining it with parchment paper for easy cleanup, if desired.

On the prepared baking sheet, toss the cauliflower florets with the 1/4 cup of olive oil, Aleppo pepper, kosher salt, and black pepper. Ensure the cauliflower is evenly coated. Spread the florets in a single layer to promote even cooking and caramelization. Roast for 20-25 minutes, or until the cauliflower is tender, beautifully browned, and slightly caramelized at the edges.

While the cauliflower is roasting to perfection, prepare your sauces. You can choose to make just one or both, depending on your dietary needs and flavor preferences.
For The Yogurt Sauce:

For The Tahini Sauce:

Gradually whisk in the warm water, adding more or less as needed, until the sauce becomes smooth, creamy, and reaches your desired pouring consistency. This sauce should be pourable but still have some body.
