Ingredients
- 1 batch of Easy 20 Minute Marinara or 3 cups of your favorite marinara
- 4 medium zucchini, thinly sliced lengthwise. (Use a mandolin for even slices. Dice up any leftover pieces to put in lasagna filling.)
- 1 pound whole milk mozzarella cheese, shredded
- 1/4 cup parmesan cheese
- 1 pound crimini mushrooms, diced
- 3.5 ounces shiitake mushrooms, diced
- 1 ounce dried porcini mushrooms
- 1 onion, diced
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Red pepper flakes, to taste
- Salt, to taste
- Pepper, to taste
- 1 tablespoon fresh basil, chopped for garnish (optional)
Instructions
- Place dried porcini mushrooms in a heatproof dish and cover with hot or boiling water. Allow to sit for 20-30 minutes to rehydrate.
- While porcinis rehydrate, prepare one batch of Easy 20 Minute Marinara Sauce or measure out 3 cups of your preferred marinara.
- Preheat oven to 350°F (175°C).
- Using a mandolin, thinly slice each zucchini lengthwise to about 1/8 inch thick. Season both sides of the slices generously with kosher salt and let them sit for 10 minutes.
- Blot the zucchini slices with paper towels to remove excess moisture and salt. Arrange the slices in a single layer on a lined baking sheet and bake for 10 minutes. Remove from oven and set aside.
- In a large sauté pan, heat olive oil over medium heat. Add a pinch of red pepper flakes and the minced garlic, cooking until fragrant, about 30-60 seconds.
- Add the diced onion and any extra diced zucchini (from the end pieces) to the pan, season with a pinch of salt. Sauté for about 5 minutes, or until the onion begins to soften. Then, add the crimini and shiitake mushrooms, oregano, thyme, and season with salt and pepper. Add the rehydrated porcini mushrooms (chopped if large), but remember to save the porcini soaking water. Continue to sauté for about 15 minutes, until most of the water released by the mushrooms has evaporated. Add approximately 1/4 cup of the reserved porcini soaking water and continue to sauté until it has evaporated and the mushroom mixture is beautifully browned and deeply flavorful.
- To assemble the lasagna, spread about 1/4 cup of marinara sauce evenly in the bottom of a 9×13 inch baking dish. Arrange about half of the prepared zucchini slices over the sauce. Cover the zucchini with half of the rich mushroom mixture, then top with about half of the remaining marinara sauce. Sprinkle generously with half of the parmesan cheese and half of the mozzarella cheese. Repeat these layers one more time: zucchini, mushroom mixture, marinara, parmesan, and mozzarella.
- Bake the lasagna in the preheated oven for approximately 40 minutes, or until the cheese is browned, bubbly, and the edges are golden. If the cheese starts to brown too quickly, you can cover the dish loosely with foil. For extra browning on top, finish under the broiler for 1-2 minutes, watching carefully to prevent burning.
- Remove the lasagna from the oven and allow it to rest for a few minutes before slicing and serving. This resting period helps the layers set. Serve with fresh chopped basil and additional parmesan cheese, if desired.
