As the holiday season winds down and the new year begins, many of us find ourselves craving a return to routine and healthier habits. After indulging in festive treats, the thought of fresh vegetables and consistent exercise becomes increasingly appealing. It’s a universal struggle: one day we’re ready for a detox, the next we’re dreaming of bacon-wrapped dates and a glass of wine. The key is to ease into a healthy lifestyle, and these make-ahead egg muffins are the perfect stepping stone to a January filled with good intentions and delicious, wholesome food.

While I might share a celebratory cocktail or appetizer later in the week, let’s kick things off with a breakfast option that truly transforms your mornings. My original make-ahead egg muffin recipe has been a fan favorite for years, and for good reason. How many times have you sacrificed breakfast because you were running late? Only to find yourself ravenous by mid-morning, reaching for the nearest sugary pastry? I know I have, more times than I care to admit! Incorporating these easy, prepped muffins into our routine fundamentally changed our weekday breakfast game, making mornings smoother and healthier.
Why These Sausage and Kale Egg Muffins Are a Game Changer

Building on the success of the classic recipe, I developed this variation to add even more flavor and nutritional punch. And what better combination than savory sausage and vibrant kale? It’s a match made in heaven! This particular twist significantly boosts your protein intake, keeping you feeling full and energized longer. Plus, it’s a fantastic way to sneak in some essential greens first thing in the morning, especially if green smoothies aren’t quite your cup of tea.
The beauty of these sausage and kale egg muffins lies in their incredible convenience. You can whip up a batch on a Sunday afternoon, and have a healthy, grab-and-go breakfast ready for the entire week. They store beautifully in the refrigerator for up to five days, ensuring you always have a wholesome option at your fingertips. And for those mornings when you crave something warm, a quick 30-second zap in the microwave transforms them into an instant hot breakfast that’s perfect for eating on the run. I typically make ten muffins, providing both my partner and me with one each workday, but you can easily scale the recipe up or down. The simple rule is: one egg equals one muffin.
Essential Tip for Perfect Egg Muffins: Use Parchment Paper Liners!

This is a critical piece of advice that I cannot stress enough: always use parchment paper baking cups. Seriously, they are a game-changer! I’ve had unfortunate experiences trying to use regular paper cupcake wrappers, and it resulted in a sticky mess where the eggs stubbornly clung to the paper. Parchment paper liners, however, release effortlessly, making for a clean, enjoyable breakfast experience every time. While they can sometimes be hard to find in regular grocery stores, they are readily available online. Trust me, investing in these specialized liners will save you a lot of frustration and ensure your egg muffins turn out perfectly.

Crafting Your Muffin Filling: Flexibility and Flavor
For the filling, I typically use about 1/3 pound of hot Italian sausage and approximately 4 cups of roughly chopped kale. While these might seem like arbitrary amounts, the goal is to fill each muffin tin only about halfway, leaving enough space for the scrambled egg mixture. I prefer to cook the sausage and kale separately before combining them, which allows me to control the exact proportion of each ingredient in every muffin. However, if you’re less particular, you can certainly brown a whole pound of sausage and wilt a full bunch of kale, then save any leftovers for other delicious meals, perhaps in a dish like Sausage and Kale Spaghetti Squash Boats.
The beauty of these muffins is their adaptability. Feel free to adjust the amount of sausage and kale to suit your taste. You could also experiment with different types of sausage, like sweet Italian or chicken sausage, or add other finely chopped vegetables such as bell peppers, spinach, or mushrooms. Just ensure any added vegetables are cooked down to release their moisture before mixing them in, to prevent your muffins from becoming watery. A touch of grated cheese, like cheddar or Monterey Jack, can also add an extra layer of flavor and creaminess.

Ingredients
- 1/3 pound hot Italian sausage
- 4 cups kale roughly chopped
- 1 shallot finely chopped
- 10 eggs scrambled, seasoned with salt and pepper
- salt
- pepper
Instructions
-
Preheat oven to 350°F (175°C).
-
Line a muffin pan with parchment paper liners, then set aside.
-
In a large pan over medium-high heat, brown the sausage until it is fully cooked through. Break it up into small crumbles as it cooks.
-
Reduce the heat to medium. Remove the cooked sausage from the pan, reserving about 1 tablespoon of the rendered fat to cook the shallot. If there isn’t enough sausage fat, add about 1 tablespoon of olive oil to the pan. Add the finely chopped shallot and cook for about 2 minutes, stirring occasionally, until it begins to soften.
-
Add the kale to the pan along with a pinch of salt. Stir carefully to combine the kale with the shallot. Cook until the kale has wilted down but still retains its vibrant green color, which usually takes about five minutes. Remove from heat.
-
Evenly divide the shallot and kale mixture between the prepared muffin liners. Then, top each with some of the cooked sausage. Each muffin liner should be approximately halfway filled with the combined kale and sausage mixture.
-
Carefully pour the seasoned scrambled eggs into each muffin liner, ensuring the egg mixture is divided evenly. It’s perfectly fine to fill them close to the top, just be mindful not to let them overflow.
-
Bake for 15-20 minutes, or until the muffins are puffed up and firm to the touch on top. They may still look a bit shiny, but there should be no liquid egg remaining.
-
Remove the muffin tin from the oven and immediately transfer the baked egg muffins to a wire rack to cool completely. This prevents them from becoming soggy.
-
Once fully cooled, transfer the muffins to an airtight container and store in the refrigerator for up to five days.
-
To reheat, simply microwave each muffin for about 30 seconds, or until warmed through.
Notes
**For a gluten-free option, always ensure that your chosen sausage is certified gluten-free.
***These muffins can be frozen for longer storage, though I personally prefer to make a fresh batch each week and store them in the fridge for optimal taste and texture. They maintain their quality in the refrigerator for up to five days. To freeze, simply wrap cooled muffins individually in plastic wrap and place in a freezer-safe bag or container for up to 1-2 months. Thaw in the refrigerator overnight or reheat directly from frozen (may require slightly longer microwave time).
