A Taste of Spring: The Inspiration Behind These Toasts

As the last vestiges of winter fade, the promise of spring fills the air, bringing with it a renewed sense of energy and the anticipation of fresh, seasonal delights. There’s a particular magic in those first warm, sunny days, signaling the arrival of vibrant produce. For me, nothing quite embodies the spirit of spring like the luscious, ripe strawberry. Its natural sweetness and juicy texture are an instant mood booster, a true harbinger of brighter days.

This deep affection for spring’s bounty was precisely what drew me to the recipe for these Strawberry Chambord Whipped Cheese Toasts. The moment I encountered it, I knew I had found a recipe that perfectly encapsulated the light, fresh flavors of the season. This brilliant creation comes from my dear friend Kristy Gardner’s highly anticipated new cookbook, “Cooking with Cocktails”. Kristy has a knack for infusing culinary creations with unexpected yet harmonious twists, and this appetizer is a shining example of her innovative approach.

Discovering “Cooking with Cocktails” by Kristy Gardner

Kristy Gardner, the incredibly talented voice behind the popular blog She Eats, has long been a source of culinary inspiration for me. I’ve admired her stunning photography and uniquely creative recipes for years, always eager to see what delicious innovation she would share next. So, you can imagine my sheer delight and honor when she invited me to be a part of her virtual book tour, celebrating the launch of her brand new cookbook! I eagerly accepted the opportunity, counting down the days until my copy arrived in the mail. This cookbook is not just a collection of recipes; it’s a work of art, beautifully designed and packed with imaginative dishes that blend the best of food and drink.

Upon its arrival, I was instantly captivated. This cookbook is truly gorgeous, and I am not exaggerating when I say I want to make nearly every single recipe within its pages. Deciding which dish to feature for this post was a delightful challenge. Should I go for the refreshing Rhuby-Tom, a unique twist on a Rhubarb Tom Collins? Or perhaps the intriguing Limoncello Shrimp with Black Pepper and Mango Salsa? The savory Maple Whiskey BBQ Meatballs also called to me, as did the decadent Classic NY-Style Margarita Cheesecake. My copy quickly accumulated about 50 post-it notes, marking pages of recipes I absolutely had to try.

Ultimately, I settled on these Strawberry Chambord Whipped Cheese Toasts. They didn’t just suggest spring; they *screamed* spring, and at that moment, I desperately needed that vibrant, fresh energy in my life. This recipe offered the perfect escape into the lighter, brighter flavors I craved, promising a sophisticated yet approachable appetizer that would perfectly complement the awakening season.

Why You’ll Adore These Spring Crostini

These delightful toasts, which you could also call spring bruschetta (and I’m certainly not a bruschetta purist!), are truly a revelation. The magic begins with the bright, fresh strawberries, which are not just simply placed on the toast but are marinated in a sublime mixture of Chambord raspberry liqueur and balsamic vinegar. This creates an unforgettable sweet and tangy kick that elevates the fruit to a new level of deliciousness. The Chambord infuses a subtle, elegant raspberry note, while the balsamic adds a complex depth and tartness, making each bite an exquisite experience.

The combination of basil and strawberries is, in my opinion, a match made in culinary heaven. The aromatic freshness of the basil cuts through the sweetness of the berries, adding an unexpected yet perfectly balanced herbaceous note. This fresh herb is not just a garnish; it’s an integral part of the flavor profile, enhancing the overall brightness of the appetizer. Complementing these vibrant flavors is the smooth, creamy whipped cheese. Its rich texture and delicate tang provide a perfect counterpoint to the marinated berries, bringing all the elements together in a harmonious symphony of taste and texture. Whether you’re a fan of elegant appetizers or simply love fresh, seasonal ingredients, these Strawberry Chambord Whipped Cheese Toasts are guaranteed to impress.

These Strawberry Chambord Whipped Cheese Toasts are a gorgeous Spring appetizer, perfect for a brunch, bridal shower or drinks on the patio!

Ingredients

  • 1/2 cup balsamic vinegar
  • 1/2 cup Chambord raspberry liqueur
  • 2 cups strawberries chopped into 1 inch pieces
  • Coarse sea salt
  • 1 loaf French baguette sliced into 1 inch pieces
  • 1 tablespoon extra-virgin olive oil
  • Freshly ground black pepper
  • 1/2 cup blue cheese OR soft goat cheese*
  • 1/3 cup cream cheese softened
  • 1/2 cup basil leaves
  • Maldon sea salt for serving (optional)

Instructions

  1. Combine the vinegar and Chambord into a small saucepan over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer for 15 minutes, or until the mixture thickens, reduces by half, and coats the back of a spoon. Set aside to cool completely.
  2. Once the syrup is cool, gently toss it with the chopped berry pieces along with 1/2 teaspoon of coarse salt. Allow this mixture to sit for 10 minutes, allowing the flavors to meld beautifully. Strain out any excess liquid, leaving about 1/4 cup of the flavorful liquid in the bowl with the strawberries.
  3. Meanwhile, arrange the baguette slices on a baking sheet and lightly brush them with extra-virgin olive oil. Season generously to taste with salt and freshly ground black pepper. Place the baking sheet in the oven under the broiler and toast the bread until it turns a beautiful golden brown. Be sure to watch them carefully, as they can burn easily under the broiler!
  4. In a separate bowl, combine the softened cream cheese with your chosen cheese (either blue cheese or soft goat cheese, depending on your preference) along with 1/2 teaspoon of coarse sea salt (if using kosher salt, reduce this to 1/4 teaspoon). Whisk these ingredients together until the mixture is light, airy, and wonderfully creamy.
  5. To assemble your elegant toasts, generously top each golden slice of baguette with a spoonful of the whipped cheese mixture. Carefully place a fresh basil leaf on top, followed by a spoonful of the marinated strawberries. For an extra touch of gourmet flair, season with a delicate sprinkle of Maldon sea salt, if desired, to enhance the flavors and add a pleasant crunch.

Notes

*Kristy’s original recipe calls for Stilton blue cheese, which offers a distinct pungent flavor. However, for those who, like me, are not keen on blue cheese, a soft goat cheese makes an excellent alternative, providing a creamy tang that beautifully complements the sweet strawberries. Feel free to use whichever cheese you love most!
