Olive Oil Roasted Chicken and Cauliflower

- 3/4 cups plus 2 tablespoons Bertolli Organic Extra Virgin Olive Oil divided
- 4 chicken thighs bone in and skin on
- 4 chicken drumsticks bone in and skin on
- 1 head purple cauliflower sliced into 1-inch steaks (any color of cauliflower will work)
- 2 ounces kumquats sliced and seeds removed
- 2 tablespoons honey
- 1 cup packed basil leaves
Instructions

Preheat oven to 425°F (220°C).

Arrange chicken on two large baking sheets (it is important to use two baking sheets in order to avoid crowding the pan. This will ensure that the food roasts instead of steams). Brush chicken with olive oil, season generously with salt and pepper. Roast for 30 minutes.

Meanwhile, in a small bowl, whisk together the 2 tablespoons honey with 2 tablespoons of olive oil and toss thoroughly with the kumquat slices.

After chicken has been roasting for 30 minutes, carefully remove baking sheets from oven. Arrange cauliflower slices and florets evenly around the chicken on both pans.
