To ensure your success in preparing this delightful dish, we’ve compiled answers to some of the most frequently asked questions about breakfast casseroles. Understanding storage, freezing, and reheating best practices will help you maximize the convenience and enjoyment of this recipe.

How Long Will a Breakfast Casserole Last in the Refrigerator?
Once baked, a breakfast casserole can be safely stored in the refrigerator for up to 3-4 days. To maintain its freshness and flavor, ensure it is placed in an airtight container or tightly wrapped with plastic wrap. This prevents it from drying out and absorbing other odors from your fridge. Leftovers are perfect for quick breakfasts or lunches throughout the week, offering a delicious and nutritious option that’s ready in minutes.
Can Breakfast Casserole Be Frozen for Future Meals?
Yes, breakfast casseroles freeze remarkably well, making them ideal for long-term meal planning. For best results, it’s recommended to bake the casserole until it is just barely set, rather than fully cooked through, before freezing. Allow it to cool completely, then wrap it tightly in aluminum foil and place it in a freezer-safe bag or an airtight container. It can be stored in the freezer for up to 2-3 months. When you’re ready to enjoy it, thaw the casserole overnight in the refrigerator, then bake it in a 350°F (175°C) oven until it’s heated through and golden brown on top, typically 25-30 minutes, or until a toothpick inserted into the center comes out clean. This method preserves both texture and taste, ensuring a satisfying meal when you need it most.
What’s the Best Way to Reheat Breakfast Casserole?
Reheating breakfast casserole is straightforward. For individual servings, the microwave is your quickest option; simply heat on high for 1-2 minutes, or until warmed through. If you’re reheating a larger portion or the entire casserole, the oven is preferred to maintain texture and prevent sogginess. Preheat your oven to 300°F (150°C), cover the casserole loosely with foil to prevent over-browning, and bake for 15-25 minutes, or until thoroughly heated. This method ensures a perfectly warm and delicious casserole every time.
What Are the Best Side Dishes to Serve with Breakfast Casserole?
A versatile breakfast casserole pairs beautifully with a variety of side dishes, allowing you to create a complete and balanced meal. Consider adding a refreshing fruit salad for a light, sweet contrast, or a basket of warm, flaky biscuits to soak up any savory goodness. Crusty toast or a simple green salad can also complement the richness of the casserole. For those who enjoy a bit more carbs, homemade muffins, sweet breads, or fluffy pancakes are excellent choices. Crafting Your Perfect Make Ahead Breakfast Casserole: A Step-by-Step Guide
Creating this delicious breakfast casserole is a straightforward process, designed for maximum flavor with minimal morning effort. Follow these simple steps to prepare your overnight delight:
Step 1: Browning the Sausage for a Flavorful Base
Begin by cooking the pork breakfast sausage in a large non-stick pan over medium heat. As the sausage browns, use a wooden spoon or spatula to break it into smaller, even pieces. This ensures it cooks quickly and distributes evenly throughout the casserole. Cook until there’s no pink remaining, which usually takes about 5-7 minutes. A perfectly browned sausage base is key to the casserole’s rich, savory taste.

Step 2: Preparing the Aromatic Vegetables
While the sausage is cooking, turn your attention to the vegetables. Thinly slice the red onion and the fennel bulb. If you’re new to cooking with fennel, don’t be deterred by its slight anise-like flavor when raw; it sweetens beautifully and develops a mild, delicate taste once cooked, adding a wonderful complexity to the casserole. Remember to trim off the green stems and feathery fronds, using only the white bulb. Once sliced, set these aside.

Step 3: Sautéing the Vegetables to Perfection
Once the sausage is fully cooked, remove it from the pan using a slotted spoon, placing it on a paper-towel-lined plate to drain any excess grease. Leave the rendered fat in the pan—this is where much of the flavor resides and will be used to cook your vegetables. Add the thinly sliced red onion and fennel to the same pan, along with half a teaspoon of kosher salt. Sauté over medium heat, stirring occasionally, until they become translucent, tender, and begin to caramelize slightly, which usually takes 15-20 minutes. Regular stirring is important to prevent burning and ensure even cooking.

Step 4: Crafting the Egg Mixture and Preparing Your Baking Dish
While the vegetables are softening, prepare your egg mixture. In a large bowl, whisk together the twelve eggs, 1/4 cup of milk, the remaining half teaspoon of kosher salt, and a quarter teaspoon of freshly ground black pepper until thoroughly combined and slightly frothy. This ensures a light and airy texture for your casserole. At this point, also take a moment to grease a 9×13-inch baking dish. This crucial step prevents sticking and makes serving and cleanup much easier.

Step 5: Incorporating Fresh Spinach
After the fennel and onion have cooked down, add the fresh baby spinach to the pan. Cook just until the spinach wilts, typically 3-4 minutes. The residual heat from the pan will be enough to tenderize the spinach without overcooking it, maintaining its vibrant color and nutrients. This adds another layer of freshness and color to your casserole.

Step 6: Assembling the Casserole Layers
Now it’s time to assemble your masterpiece in the prepared baking dish. First, spread the cooked sausage in an even layer across the bottom of the dish. This creates a solid, savory foundation.

Next, carefully spread the cooked vegetable mixture (onions, fennel, and wilted spinach) over the sausage layer. Aim for an even distribution to ensure every bite is packed with flavor and texture.

Finally, pour the whisked egg mixture evenly over the entire dish, making sure to cover as much of the sausage and vegetables as possible. It’s perfectly fine if some of the ingredients peek through; they will cook beautifully and add texture to the top layer.

Step 7: Overnight Chill and Morning Bake
Once assembled, cover the baking dish tightly with plastic wrap and refrigerate it overnight. This allows the flavors to meld beautifully and simplifies your morning routine. If you decide to bake it immediately, you can skip the overnight chill. In the morning, remove the casserole from the fridge 20-30 minutes before baking to allow it to come closer to room temperature. Preheat your oven to 350°F (175°C) and bake for 35-40 minutes, or until the center is set and a toothpick inserted comes out clean. The top should be golden brown and the edges slightly puffed.

8 Servings
Ingredients
- 1 pound pork breakfast sausage
- 1/2 red onion
- 1 fennel bulb
- 1 teaspoon kosher salt divided
- 5 ounces fresh baby spinach
- 12 eggs
- 1/4 cup milk
- 1/4 teaspoon ground black pepper
Instructions
-
Cook the sausage in a non-stick pan over medium heat until no longer pink (5-7 minutes), breaking it up as it cooks with a wooden spoon or spatula.
-
While the sausage is cooking, thinly slice the fennel bulb and onion. Set aside.
-
Once the sausage is done, remove with a slotted spoon on a paper towel lined plate to drain, leaving the grease in the pan.
-
Place the thinly sliced fennel and onion into the greased pan, along with ½ teaspoon kosher salt and cook until both are turning translucent and starting to brown, about 15-20 minutes. Be sure to stir every couple of minutes so the veggies don’t burn.
-
While the fennel and onion are cooking, crack eggs into a large bowl. Pour in the milk, ½ teaspoon of kosher salt, and ground black pepper. Whisk together until fully combined. Also grease a 9×13 baking dish and set aside.
-
Once the fennel and onion are done cooking, place the baby spinach in the pan and cook until wilted, about 3-4 minutes.
-
Place the cooked sausage in an even layer in the baking dish, then place the veggies over the sausage in an even layer. Next pour the egg mixture over everything, making sure most of the veggies are covered (it’s okay if some parts are above the egg).
-
Put plastic wrap over the top of the dish and put it in the fridge overnight. Alternatively, you can also cook it right after making it, if you wish (just skip step 9).
-
In the morning, take the baking dish out of the fridge and let come up to room temperature (about 30 minutes).
-
Preheat the oven to 350°F (175°C), then bake the dish in the oven for 35-40 minutes. Insert a toothpick in the middle to make sure it’s cooked through. Let sit for 5 minutes to cool slightly before serving!
