My Spanish Culinary Journey: From Fred Meyer to Fond Memories

I am absolutely thrilled to share yet another beloved Spanish tapas recipe with you today! A few weeks ago, when I first introduced my Ham Croquettes, I mentioned that Fred Meyer had approached me to create a Spanish-inspired dish to celebrate their “Taste of Spain” event. While they initially requested just one recipe, my passion for Spanish cuisine quickly took over, and I found myself brainstorming several dishes I was eager to explore and share. The wonderful news is that the “Taste of Spain” event is officially underway right now, running from April 3rd to April 16th at all Fred Meyer and Kroger stores! This is the perfect opportunity to dive into the rich and diverse flavors of Spanish cooking.

During the preparations for this Spanish recipe series, I had a truly delightful and coincidental discovery that I simply must share. While styling my food photography, I wanted to include a bottle of authentic Spanish wine to enhance the ambiance. I spent a considerable amount of time – let’s just say a good while – in the wine aisle at Fred Meyer, carefully selecting the perfect bottle. I finally settled on a Marque de Cáceres Rioja. Interestingly, the wine didn’t make it into many of the final shots (the photo above being one of the rare exceptions), but its presence subtly contributed to the overall Spanish mood I was aiming for.

Fast forward a few days, as I was reminiscing and sifting through my old study abroad photos from Spain back in 2004, I noticed something remarkable. In several pictures from my farewell dinner in Spain, the exact same wine I had just purchased for my photoshoot was sitting on the table! I had absolutely no recollection of that particular wine when I bought it for the blog, yet 12 years later, I had unconsciously chosen the exact same bottle. How incredibly serendipitous is that? Perhaps I’m overly excited by such small connections, but I even put together a little collage to illustrate this curious twist of fate – showcasing the wine I bought recently for my Spanish recipes alongside two rather blurry photos of the same wine from Spain in 2004. Please forgive the poor quality of those older photos; it was 2004, a time before smartphones, and I barely had a digital camera. I suspect my point-and-shoot was on some obscure nighttime setting that blurred everything, or perhaps there was simply too much wine involved. Probably a combination of both!

But enough about my personal anecdotes (you’re probably here for the food!), let’s dive back into the star of today’s show: Garlic Shrimp, or as it’s famously known in Spain, Gambas al Ajillo. This tapa is a masterpiece of simplicity, bursting with robust garlic flavor and a delightful hint of spice. It’s a dish that truly exemplifies the philosophy of Spanish tapas – small plates designed for sharing, encouraging conversation, and celebrating fresh, quality ingredients.

At its heart, Gambas al Ajillo relies on a few key components: plump, tender shrimp, fragrant garlic, a generous amount of good quality olive oil, and a touch of heat from red pepper flakes (or *guindilla* in Spain). That’s why I cannot stress this enough: you absolutely need some excellent, crusty bread to serve alongside this dish. Once cooked, serve immediately, directly from the sizzling pan if possible, to truly capture that fresh-from-the-stove experience.

This garlic shrimp is a simple tapa dish that is garlicky and spicy.

Ingredients

  • 1 pound large raw shrimp
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/4 cup fresh lemon juice
  • 4-6 garlic cloves minced
  • 1 teaspoon Spanish smoked paprika
  • 1/2 teaspoon red pepper flakes or to taste
  • Salt to taste
  • Pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Add butter, olive oil, minced garlic, and red pepper flakes to a large sauté pan or skillet. Heat over medium heat.
  2. Sauté for about 1 minute, or until the garlic becomes wonderfully fragrant and lightly golden, being very careful not to let it burn (burnt garlic turns bitter).
