Friends, prepare yourselves for a culinary revelation. This One Pot Pasta Bake with Sausage and Wine isn’t just a recipe; it’s a lifestyle upgrade. While I wouldn’t want to overstate it, the simplicity is truly remarkable: you literally toss all the ingredients into an oven-safe pot – yes, even the dry pasta – and let your oven do the hard work. The result? A remarkably rich, robust, and utterly cheesy pasta dish that will have everyone convinced you’ve spent your entire day simmering a gourmet meal. The secret lies in the pasta absorbing all the flavorful liquid directly in the oven, infusing every strand with the delicious sauce.
I must admit, I approached this method with a healthy dose of skepticism. The notion of skipping the traditional pasta boiling step seemed, frankly, a bit unorthodox. But after my first glorious bite, all doubts vanished. It works, and it works beautifully, creating a creamy, al dente texture that perfectly complements the savory sausage and aromatic wine-infused sauce. This no-boil technique not only saves you a significant amount of time and effort but also concentrates the flavors in a way that truly elevates the dish.

The Magic of One-Pot Pasta: Flavor, Convenience, and Less Cleanup
Who isn’t constantly on the hunt for easy yet extraordinarily delicious dinner recipes? I certainly am, and I know I’m not alone in this culinary quest! This One Pot Pasta Bake with Sausage and Wine has quickly become a cherished favorite in my kitchen. It’s wonderfully hearty and deeply satisfying, making it an ideal meal as the weather begins to cool and we crave comforting dishes. The addition of red wine introduces a magnificent depth of flavor to the marinara sauce, transforming it from good to truly gourmet.
Traditional baked pasta dishes, while undoubtedly delicious, often come with more steps and cleanup than anticipated. First, you boil the pasta in one pot, then drain it. Next, you prepare the sauce in another pan. Finally, you combine everything in yet another dish for baking. The sheer volume of dirty pots and pans can be enough to make you surrender and reach for the takeout menu! This recipe, however, streamlines the entire process. Everything, from browning the sausage to baking the pasta, happens in a single skillet or pot. This means you only dedicate about ten minutes of active, hands-on prep time. While the dish bakes for approximately 50 minutes, this is your cue to relax, unwind, and enjoy your evening. Pour yourself a glass of the same red wine you used in the recipe, put on your favorite Italian Dinner Party playlist, and let the oven work its magic.
The genius of the “no-boil” method lies in the pasta cooking directly in the sauce. As the penne absorbs the seasoned liquid, it swells, becoming tender and infused with all the rich flavors of the sausage, marinara, garlic, herbs, and wine. This absorption process not only eliminates an extra pot but also creates a thicker, more flavorful sauce that clings beautifully to every piece of pasta, making each bite an absolute delight.

Exploring the Ingredients: Crafting the Perfect One Pot Pasta Bake
The beauty of this One Pot Pasta Bake lies in its simple yet robust ingredients, many of which you can find at your local Fred Meyer during their Taste of Italy event. Let’s delve into what makes each component essential for this easy weeknight dinner:
- Italian Sausage: We recommend a hot Italian sausage for a delightful kick, but mild Italian sausage works equally well if you prefer a gentler flavor profile. You could even use Italian turkey sausage for a leaner option. Browning the sausage first is crucial as it creates a flavorful base for the entire dish.
- Marinara Sauce: A high-quality marinara sauce is key. During the Fred Meyer Taste of Italy event, look for authentic Italian brands like Orti D’Italia, which offers a rich, vibrant base. While you can certainly use homemade marinara, a good store-bought option makes this recipe even quicker.
- Garlic, Red Pepper Flakes, and Dried Oregano: These aromatics and spices are the heart of Italian cooking. Minced garlic provides a pungent warmth, red pepper flakes add a customizable heat, and dried oregano brings that classic, earthy Italian herb flavor. Adjust the red pepper flakes to your preferred spice level.
- Red Wine: The red wine is not just for deglazing; it adds incredible depth and complexity to the sauce. Choose a dry red wine you enjoy drinking, such as a Chianti, Merlot, or Cabernet Sauvignon. The alcohol cooks off, leaving behind a sophisticated flavor that enhances the entire dish. If you prefer to omit wine, vegetable or chicken broth can be substituted, though the flavor profile will be slightly different.
- Penne Pasta: Penne is an excellent choice for this bake because its tubular shape and ridges hold the sauce beautifully. Other short, sturdy pasta shapes like ziti, rigatoni, or even rotini would also work well, just ensure they are of similar size for even cooking. The magic of this recipe is using uncooked pasta directly in the pot, where it soaks up all the rich flavors.
- Parmesan and Mozzarella Cheese: A combination of cheeses creates the perfect cheesy pasta bake. Grated Parmesan cheese is stirred into the sauce for its salty, nutty depth, while shredded mozzarella forms a glorious, bubbly, melted topping that pulls it all together.
- Water: This is crucial for cooking the pasta. Combined with the marinara and wine, it creates enough liquid for the penne to absorb and become tender.
- Fresh Herbs: Optional, but highly recommended for garnish. Fresh basil or parsley adds a bright, fresh finish and a pop of color that elevates the presentation.
I genuinely hope this One Pot Pasta Bake with Sausage and Wine becomes a staple in your home, bringing as much joy and ease to your dinner routine as it has to mine. Now that you’ve got extra time on your hands from the minimal cleanup, what will you do with it? Perhaps linger a little longer at the dinner table, or simply enjoy a quiet moment of relaxation!

Ingredients
- 1 tablespoon olive oil
- 8 ounces ground hot Italian sausage
- 24 ounces marinara sauce (I used Orti D’Italia)
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (or to taste)
- 1 teaspoon dried oregano
- Salt, to taste
- Pepper, to taste
- 1/2 cup grated parmesan cheese
- 8 ounces penne pasta (uncooked)
- 1/2 cup red wine
- 1/2 cup water
- 2 cups shredded mozzarella cheese
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet or pot with a lid, heat 1 tablespoon of olive oil over medium heat. Add the ground hot Italian sausage and cook, breaking it up with a spoon, until it is thoroughly browned. This should take approximately 5-7 minutes.
- Add the minced garlic, red pepper flakes, dried oregano, and season with salt and pepper to your taste. Cook for about 30 seconds, or until the garlic becomes fragrant.
- Stir in the marinara sauce, uncooked penne pasta, water, red wine, and grated parmesan cheese. Mix well to ensure all ingredients are combined and the pasta is submerged in the liquid.
- Cover the skillet or pot with its lid and carefully place it into the preheated oven. Bake for approximately 45 minutes, allowing the pasta to cook and absorb the sauce.
- Remove the pasta bake from the oven. Evenly sprinkle the shredded mozzarella cheese over the top of the pasta. Return the pan to the oven, this time uncovered, and bake for an additional 5 minutes, or until the mozzarella cheese is fully melted and bubbly.
- For a beautifully golden and slightly crisped cheese topping, you may place the skillet under the broiler for 1-3 minutes. Watch it very carefully to prevent burning, as broilers can brown quickly.
- Garnish with fresh herbs, if desired, before serving hot. Enjoy your effortless One Pot Pasta Bake!
Notes
The amount of salt needed will vary depending on the salt content of your specific Italian sausage and marinara sauce. It’s always best to season to taste, adding more if necessary after tasting the sauce.
Serving Suggestions:
This One Pot Pasta Bake is a complete meal on its own, but it pairs wonderfully with a simple green salad dressed with vinaigrette and a side of crusty garlic bread to soak up any remaining delicious sauce.
Variations & Substitutions:
- Vegetarian Option: Replace Italian sausage with plant-based ground “sausage” or a hearty combination of sliced mushrooms and bell peppers for a delicious meatless version.
- Spice Level: Increase or decrease the red pepper flakes to suit your preference for heat. A pinch of cayenne pepper can also amplify the spice.
- Vegetable Boost: Feel free to add diced onions, bell peppers, or a handful of fresh spinach during the last 10 minutes of baking for added nutrition and flavor.
- Wine Alternative: If you prefer not to use wine, an equal amount of chicken or vegetable broth can be used as a substitute.
